Quintessential Quinoa



Health enthusiasts love quinoa (pronounced keenwa)  because it is one of the highest protein grains around. According to Self magazine quinoa is amongst the top foods that runners should consider including in their diets.  Oxygen magazine reports that if you want flat abs you should make sure that quinoa is a regular in your meal plans.  Quinoa, a wheat free grain with ancient origins from South America, has been named a superfood.  I enjoy it simply because it  tastes good.  


You don't need to be a good cook to make a great tasting quinoa dish.  It cooks up similar to rice with two cups of water to one cup of quinoa and it is done in 15 minutes.  It's easy to make and everyone seems to love it. Best of all it is becoming so popular that there are tons of quinoa recipes.  People are making quinoa for breakfast, lunch, and dinner.  


At one point you had to go to a health food store to purchase quinoa, but recently I was able to purchase a large bag of Ancient Harvest Organic Quinoa at a great price from Costco.  Bob's Red Mill Organic Grain Quinoa and Nature's Path Organic Heritage O's are two other brands available in most supermarkets.  Quinoa looks a bit like couscous but it is lighter and fluffier.  You can substitute quinoa in any recipe that calls for rice or couscous or you can follow any of the recipes here:
